Hummus

Prep time: 15 minutes Cook time: 2-3 minutes Serves 4

½ teaspoon extra-virgin olive oil, plus ½ cup extra-virgin olive oil
1 clove garlic, crushed
1 15-ounce can garbanzo beans, drained and rinsed well
Juice of 1 lemon
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika
Parsley sprigs, for garnish
1 package Mediterranean flat bread, or whole-wheat pita bread, cut into
triangles and heated
1 bunch green onions, cleaned and left whole
1 bunch small radishes, cleaned and left whole
(can add 1/3 cup Tahini into mixture if desired)

Heat ½ teaspoon of olive oil in a small saucepan over medium heat for
1 minute. Add the garlic; sauté for 1-2 minutes or until golden. Remove
from the heat. In a food processor, combine the garbanzo beans, ½ cup of
olive oil, and cooked garlic; pulse on low speed for 20 seconds. Add the
lemon juice, salt, and pepper; blend until creamy smooth. Transfer the
hummus to a microwave-safe bowl and microwave on high for 20 seconds.
Stir thoroughly. Sprinkle with the paprika, and garnish with the parsley.
Serve with the warm whole wheat pita or fresh vegetables. Enjoy!
