VINE-ON TOMATO AND BASIL SALAD
This is a tasty salad especially refreshing this time of year. Mangia!
Prep time: 10 minutes Serves 4
3 tablespoons red wine vinegar
1 clove garlic, crushed
6 fresh basil leaves, torn (or 1 teaspoon dried basil, crushed)
π cup extra-virgin olive oil
4 ripe vine-on tomatoes, chopped into bite-size pieces
(Roma tomatoes also work well)
1/2 red onion, chopped
Salt and pepper to taste/can also add some garlic powder if you like
In a medium-size bowl, stir together the vinegar, garlic, and basil. Slowly
whisk in the olive oil, mixing thoroughly. Add the tomatoes, onion, salt,
and pepper. Toss lightly to coat. Serve at room temperature.
