JANET’S AVOCADO SPREAD

The Color of This Spread Is As Beautiful As the Spread Is Delicious!

This is one of the easiest and most healthful spreads you can make. In a few minutes, you transform ripe avocados into a delicious spread that you can enjoy on everything from chips to tacos. My personal favorite is on whole-wheat or egg ’n onion matzos (cracker-like flat bread), a great snack when you’re in the mood for something yummy, light, and nutritious.

Prep time: 5 minutes Serves 4

2 large, ripe avocados
1 teaspoon garlic powder
½ teaspoon black pepper
1 teaspoon extra-virgin olive oil
½ teaspoon fresh lemon juice
Salt to taste

Rinse the avocados and cut them in half. Remove the pit from each. Scoop the avocado pulp onto a plate and mash it with a fork. Add the garlic powder, black pepper, olive oil, and lemon juice. Mix thoroughly until smooth. Add salt to taste. Serve immediately.

TIP: To remove the pit: Place the avocado on a cutting board. Using a large, sharp
knife (keep your hands out of the way), strike the pit with the blade, twist, and lift.
The pit should come right out.

Thank you very yummy. I used fresh lemon rind also.
But I am having trouble with my avocados they are very hard when I buy them, can’t find anything but hard ones. By the time they ripen they look spoiled and I have to throw away most of the pulp.

Hi Sherie,
Buy your avocados when they’re not rock hard if possible. If those are the only ones available, you can put them in a brown paper bag and they will ripen more quickly, but you must check them everyday for ripeness, otherwise they’ll spoil before you know it. A ripe and ready avocado should be a bit soft to the touch. Try it, you’ll like it!
