Ingredients
1/4 cup extra virgin olive oil
2 tablespoons red wine or white wine vinegar
2 garlic cloves, minced
1 teaspoon fresh taragon, finely chopped
1 teaspoon dried oregano (pinch to bring out the oils)
1/2 tablespoon fresh lemon juice
salt and pepper to taste (Sicilian salt is especially good)

Directions
Whisk all ingredients in small bowl, add slowly to salad, combine and taste, adding more if needed.
