veal piccata

Well I think I outdid myself last night with this amazing, healthy recipe that as always was easy to make as well asĀ healthierĀ and lighter.
You’ll only need a few ingredients:

1/4 cup of whole wheat flour or unbleached all-purpose
salt and pepper
1 1/2 pounds thinly sliced veal or boneless/skinless chicken breasts pounded thin
1/2 tablespoon Earth Balance or other healthy butter alternative
3 tablespoons extra-virgin olive oil
Splash of Red Wine Vinegar
Capers/as many as you like
Parsley for garnish/chopped finely

On a flat plate, combine a sprinkle of salt and pepper with flour
Dredge veal or chicken through flour and put on separate plate
In a large skillet, heat up olive oil, 1-2 minutes
Put veal into hot skillet and let cook until brown, about 2 minutes, then turn and do the same
When done, transfer to plate lined with paper towel
Wipe out skillet with a paper towel, heat up and add butter alternative
Add vinegar, capers and a little more salt and pepper to taste, stir to combine
Add cooked veal and heat through. Serve immediately, and garnish with chopped parsley.

ESCAROLE
1-2 bunches fresh escarole
1 tablespoon extra-virgin olive oil
2 cloves fresh garlic/finely chopped
salt and pepper
Clean escarole with cold running water and pat dry or put in spinner
heat up large skillet, add olive oil
add garlic and escarole
let cook down for a few minutes, it should be fork tender not mushy
add a sprinkle of salt and pepper for taste, then enjoy!
