Panzanella Salad is a very popular Italian dish. A great way to recycle stale bread, it combines fresh beautiful tomatoes, basil, peppers, onions and garlic, tossed gently with homemade oil and vinegar dressing. Roasting the vegetables adds incredible flavor! I guarantee this will become a favorite. Salute!

Health Tip: Bell peppers are an excellent source of Vitamin C and A, and red bell peppers contain a bonus boost of antioxidant lycopene.

Pssst. No plum tomatoes on hand? It's okay. Use whatever you have! Use your imagination with the veggies, too. A great way to really make this salad your own!
