ZUCCHINI CASSEROLE

Casseroles have been a long-standing comfort food, and this one is no exception. Made mostly with fresh zucchini, it’s a side dish packed with great taste and critical nutrients: low in calories (21 per cup), high in potassium, Vitamins B2, B6 and Vitamin C, plus a healthy amount of fiber. Enjoy them while in peak season, late Summer to early Fall! Keep refrigerated and use within 2 - 3 days of purchase (the high water content makes them vulnerable to getting mushy and moldy), and the darker the skin, the more nutrients there are; so eat the skin, and buy organic, if you can.
