Look to the rainbow for flavor, and for your health! This Orzo Rainbow Pasta is a tasty salad that packs plenty of nutrition into every bite. Prep to cook time is an easy 30 minutes. You know how I feel about tomatoes...the fresher, the better! Gently tossed with whole wheat orzo pasta (which has fewer calories than regular pasta and also provides iron and important B vitamins) olive oil, fresh basil, red onion, garbanzo beans and pine nuts, plus a spark of garlic, tangy goat and Parmesan cheese, it's a delicious, filling yet light, summer salad. Go ahead and have fun with this dish. Add any combo of your favorite veggies to it, chopped and lightly steamed so they still have some crunch. Delizioso!
